This recipe originates with Jeannie Eastman of Harrisville. When we first moved to our farm from South Carolina, Jeannie and her friend Deirdre Oliver, also of Harrisville, were the self-appointed new farmer welcoming committee. They came over with a gorgeous basket of produce and goodies for us. It was after their visit and many others that followed shortly thereafter that we felt certain we could not have picked a better community for our new life. I changed this recipe to use chocolate wafers instead of the traditional vanilla and rice syrup instead of corn syrup. I’ll share my chocolate wafer recipe another time.
Combine all ingredients and let stand for 60 or more minutes. Scoop, round and roll balls into powdered sugar, ground pecans or cocoa powder. Keep refrigerated. These freeze well.
