November 15, 2016This bright winter slaw uses homemade mayonnaise. Making your own mayonnaise will upgrade your leftovers and turn you away from Hellman’s for good. The slaw is great in any context — as a side dish or on a sandwich heaped with leftover Christmas ham or Chanukah brisket.
1.5 pounds of cabbage, cores removed and cut into chunks
- 3 large apples, cored
- 2 cups celery root, peeled and cut into chunks
- 1/4 cup homemade mayo
- 1/2 cup cider vinegar
- 2 teaspoons lemon juice
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 2 pinches white pepper
- 2 T minced parsley (optional)
Thinly slice cabbage in food processor. Change to a grating blade and grate apples and celery root. Combine with all other ingredients. Refrigerate one hour and adjust seasoning to taste.
